From sausages to steaks, and everything in between, South Americans, and Argentinians in particular, know how to do it right! Here are some tips for grilling the Argentine gaucho way:

1. Talk to your butcher. They’ll lead you to the freshest cuts of meat and may also have a few tips for preparing it in the tastiest way possible.

2. Light the grill. The pros will tell you that cooking over wood coals is key. If your grill isn’t equipped to burn wood, charcoal is your next best alternative. When using charcoal, remember to use the coals once they are burned through and red hot to avoid any unpleasant flavors that tend to accompany cooking over charcoal.

3. Simple flavors. Keep it simple when seasoning your meat. A nice seasoning salt and some fresh ground pepper will do.Kick up the flavor with a batch of bright and tangy chimichurri sauce to serve on the side.

4. Bold wines. Bold meats call for bold wines. Serve a glass of Purple Cowboy Tenacious Red or Trail Boss Cabernet with your meal. Both pair beautifully with grilled meats.

Whether it’s a party, getting together to watch a football game or a laid-back night in,wine and cheese makes entertaining easy. Here are some tips for putting together a wine and cheese plate for just about any event:

Simple is key. A few different types of cheeses is all you’ll need. No need to buy ’em all! This featured cheese platter includes a spicy habanero cheddar, a light sharp cheddar, sharp cheddar, havarti and brie.

Stay thrifty. The cheese platter featured in this photo shoot cost less than $25! Browse the cheese section of your local grocery store, chat with your store’s cheesemonger and ask about any new arrivals and learn which cheeses are on sale.

Keep it fresh. We’re headed into fall, prime cheese platter fruit season. Grapes and apples are a given but consider figs, berries and woody herbs.

The perfect bite. What’s included in your perfect cheese and cracker bite? We love sharp cheddar with salami and a Ritz cracker. No need to get too fancy!

Cut it up. make sure each cheese has it’s own knife. Don’t be afraid of cutting cheese too small — it’s those big pieces that are hardest to eat.

Wine time. Consider an array of wine choices when you’re entertaining. Dry white wines are wonderful with many fresh and soft-ripened cheeses. Full-bodied reds, like Purple Cowboy Tenacious Red and Trail Boss Cabernet have bigger tannins, more texture and a more intense flavor that pair beautifully with big, bold cheeses.

Trevor Knowles Wins AGAIN in Calgary

This month, Trevor Knowles, our Purple Cowboy endorsee on the Pro Rodeo Circuit, took home the top prize from the Calgary Stampede – his 4th win in Calgary since 2009! He’s the only competitor since 1970 to win four times in the same event.

“Being on that stage never gets old, that’s for sure,” Knowles said after being handed the giant $100,000 check before the crowd.

Even with the money he earned in Calgary, Trevor stays humble. “The bulldoggers are the greatest best bunch of guys you could ask for, so there’s a lot I’ve taken away from rodeo. A gold buckle would be nice, but it isn’t everything to me,” said Trevor in the Calgary Sun.

Fourth of July Grilling with Purple Cowboy Wines

It’s hot out there, far too hot to turn on the oven, and the great outdoors are calling (even if it’s only as far as the back yard). Not to mention, the Fourth of July this Saturday provides the perfect opportunity to flex those grilling muscles in preparation for more summer cookouts and holidays.

May we present, one of the tastiest grilled sandwiches, that just to happens to pair deliciously with a glass of Purple Cowboy Tenacious Red (recent winner of the Chairman’s Award ‘Unanimous GOLD’ and Best of Class at the Riverside International Wine Competition!).

The Day Before:  Glaze the Hanger Steak
GRAB:
8 dried guajillo chiles, seeded
4 large garlic cloves
2 t. dried oregano
6 T. canola oil, plus more for brushing
Salt and freshly ground pepper
1 trimmed hanger steak (about 1 pound), cut into 4 pieces
1 large onion, finely chopped
1/4 c. light brown sugar
1/4 c. cider vinegar

  1. In a medium microwave-safe bowl, cover the chiles with water and microwave at high power until softened, 5 minutes. Let cool slightly. Transfer the chiles and 1/2 cup of the soaking liquid to a blender. Add the garlic, oregano and 4 tablespoons of the canola oil; puree until very smooth. Strain the puree and season with salt and pepper.
  2. Season the steaks with salt and pepper and rub with half of the chile puree. Transfer the steaks to a resealable plastic bag and refrigerate overnight.
  3. In a medium saucepan, heat the remaining 2 tablespoons of oil. Add the onion and cook over moderate heat until softened, about 7 minutes. Add the remaining chile puree and cook, stirring, for 2 minutes. Add the brown sugar and vinegar and simmer for 3 minutes. Season the glaze with salt and pepper.
  4. Light a grill or preheat a grill pan. Brush the steaks with oil and grill over moderate heat until medium-rare, 12 minutes; brush with 3 tablespoons of the glaze in the last 2 minutes. Let the steaks rest for 5 minutes before slicing 1/2 inch thick. Serve the steaks with the remaining chile glaze.

On the 4th:
GRAB:
1/2 cup mayonnaise
2 tablespoons cider vinegar
1 tablespoon sugar
Salt and freshly ground pepper
12 ounces shredded coleslaw mix
Chile-Glazed Hanger Steak, plus leftover glaze, coarsely chopped
3/4 cup low-sodium chicken broth
6 brioche burger buns, toasted
Lettuce and tomato slices, for serving

  1. In a bowl, whisk the mayonnaise, vinegar and sugar and season with salt and pepper. In a food processor, pulse the coleslaw until coarsely chopped. Stir the slaw into the dressing and let stand for 10 minutes.
  2. In a large saucepan, combine the remaining glaze and the broth and simmer over moderate heat until reduced by half, about 5 minutes. Add the chopped steak, season with salt and pepper and cook until just heated through, about 2 minutes.
  3. Top the brioche buns with the lettuce and tomato and mound the steak on top. Using a slotted spoon, cover with the coleslaw. Close the Sloppy Joes and serve.

Trevor Knowles Hits the Hall of Fame!

Trevor Knowles, our Purple Cowboy endorsee on the PRCA circuit and 11-time Wrangler National Finals Rodeo steer wrestler, was named to the National Wrestling Hall of Fame in Stillwater, Okla., as part of its Class of 2015 Oregon chapter honorees.

The Hall of Fame is also giving him the Outstanding American award for his rodeo and wrestling accomplishments as well as his work with the nonprofit Operation Comfort Warriors – an American Legion program in which Knowles visits military veterans across the country.

“I think wrestling’s making a comeback,” he said.

He’s still involved in wrestling, supporting the USA Wrestling Building Blocks program and helping coach youth at the Grant County Freestyle Wrestling Club in John Day in the winter.

His brother Drew, who has two children in the local club, also helps with coaching.

Trevor said it helps when young athletes have good coaches who are able to communicate.

“(You get it) coached into you,” he said.

His advice to youth: “Athlete or not, don’t be afraid to work hard for whatever it is – it will all pay off.”

Hot Brown Bites

1. Brush slices of baguette with olive oil and toast until light brown.

2. Top baguette slices with turkey, Mornay sauce (we jazzed ours up with a squeeze of lemon and a couple of dashes of cayenne) and diced tomato.

3. Flash briefly under broiler until sauce bubbles.

4. Finish with toppings of chopped bacon, parsley and dusting of paprika.

Tough Enough to Wear Pink Update

December, 2014 marked the 10th Anniversary of Tough Enough to Wear Pink.

“We’re proud to have raised over $20 million since the program began.  We are proud of the over 300 rodeos and events that participate each year.  We are proud of the western retailers and western manufacturers that participate in the program.  And we are proud of the cowboys and cowgirls who have made this campaign their own,” said founderTerry Wheatley.

A breast cancer survivor herself, Wheatley is an entrepreneur, wine industry executive, and wife and mother to professional rodeo competitors.

“We never imagined that, after ten short years we could accomplish so much.   The stories we hear throughout the country of how the money raised from local events has gone to help women are heartwarming” commented Wheatley.

Wheatley founded Wrangler Tough Enough to Wear Pink in 2004 with Karl Stressman, former Director of Special events for Wrangler and now Commissioner of the Professional Rodeo Cowboys Association (PRCA).

Keeping it in the family…Lacey Wheatley, Terry Wheatley’s daughter-in-law, is the Director of Tough Enough to Wear Pink and coordinates with rodeos and other non-rodeo organizations to create the pink-themed fundraisers.

How it all began.

In 2004, Terry was looking forward to attending the Wrangler National Finals Rodeo in Las Vegas as she had for many years.  Her son Wade Wheatley was a consistent WNFR finalist in team roping (header) and her husband Jim had been a six-time WNFR team roping qualifier himself.  Terry was a senior executive at a major wine company sponsoring the WNFR telecast.

But Terry had recently undergone breast cancer surgery and, although things looked positive, it was on her mind.  She had lost her grandmother to breast cancer, her mother had a double mastectomy before the age of 40 and her daughter Katie had undergone two surgical biopsies before the age of 20.

“It seemed as if everyone I knew was affected” recalls Terry.  “I felt a very strong need to somehow take action.”

Terry realized from her own situation that early diagnosis and treatment was key to a successful outcome.  She toyed with some ideas to rally the rodeo and western community to get that message across.  And then the big one hit.  What if, on one night of rodeo’s greatest spectacle, the competitors could be convinced to wear pink shirts?  Not a color normally associated with rugged events such as bull riding and steer wrestling, but that was the point.  That was how to make a statement.  Broadcast on national television, no less.  All she had to do was make it happen.  In three weeks.

Rodeo world to the rescue.

Finding pink cowboy shirts proved to be the next challenge.  Enter Karl Stressman and Wrangler who just happened to have pink shirts in production for the spring, 2005 line.  Problem was they weren’t scheduled to be delivered until the new year.  With a few strategically placed phone calls, Karl arranged a special rush production of 200 shirts to be air-freighted directly to Las Vegas just in time for the rodeo.

Terry needed to get the challenge out to the cowboys – and fast.  The Professional Rodeo Cowboy’s Association (PRCA) jumped in to help, disseminating information about the pink shirt campaign to the finalists.  Son Wade his part too, spreading the world to his fellow cowboys and cowgirls.

“I gladly accepted the challenge in support of my mom, but I sure couldn’t predict what the others would do.  After all, it was a pink shirt” explained Wade.

And he might very well have been the only cowboy wearing one that night.  Wade wasn’t sure – nobody was – if the world’s toughest cowboys would rally to the cause.  Would they be Tough Enough to Wear Pink?

That question was answered once and for all as the competitors and spectators turned the Thomas & Mack Arena into a sea of pink that night.  To the thrill of Terry, Karl and everybody who helped make it happen, one after another pink-shirted cowboys and cowgirls galloped into the arena sporting the color of breast cancer awareness.  The campaign received national media attention….the rest is history.

Terry Wheatley, a California entrepreneur left her corporate wine career in 2005 to create Canopy Management, a Napa Valley wine company creating, marketing and selling wine under the Wine Sisterhood™ banner.  One of Wine Sisterhood’s wines, Purple Cowboy, is the official wine of TETWP, with $1 for every case sold going to the campaign.  Purple Cowboy is also the official wine of the Professional Rodeo Cowboy Association.

“As founder of both Tough Enough To Wear Pink and Wine Sisterhood, I wanted to find a way for our wine to help support the cause.  We are supporting TETWP events with wine whenever we can,” says Wheatley.

Purple Cowboy wines include Tenacious Red and Trail Boss Cabernet Sauvignon, both from the cowboy wine country appellation of Paso Robles.

Terry sold Canopy Management to Vintage Wine Estates in 2014 and now is the Executive Vice President of Sales and Marketing – and continues to market wines that support Tough Enough to Wear Pink.
